- 3-4 pound beef chuck roast
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4-5 cloves garlic, minced
- 2 cups beef broth
- 1 cup dry red wine
- 2-3 sprigs fresh thyme

- 3-4 large carrots, peeled and chopped
