For a delicious and hearty pot roast that will be a hit with your family, follow this recipe:
- 3-4 pound beef chuck roast
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4-5 cloves garlic, minced
- 2 cups beef broth
- 1 cup dry red wine
- 2-3 sprigs fresh thyme
- 2-3 sprigs fresh rosemary
- 3-4 large carrots, peeled and chopped
- 2-3 stalks celery, chopped
- 2-3 potatoes, peeled and chopped
- Salt and pepper to taste
Preheat your oven to 325 degrees Fahrenheit.
Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the onion and garlic and cook for a few minutes until they start to soften. Add the beef broth, red wine, thyme, and rosemary to the pot and bring to a simmer.
Season the beef roast generously with salt and pepper. Add the beef roast to the pot, making sure it is completely covered by the liquid. Add the chopped vegetables around the beef roast.
Cover the pot and place it in the oven. Cook for 3-4 hours, or until the beef is tender and falls apart easily with a fork.
Remove the pot from the oven and let it rest for 10-15 minutes before serving. Serve the pot roast with the vegetables and some crusty bread for a delicious and hearty family dinner.
