- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 4 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh green onions, chopped
- 2 bay leaves
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano

- 6 cups seafood stock
- 1 pound crabmeat
- 1 pound shrimp, peeled and deveined

- Add crabmeat, shrimp, oysters and crawfish tails; cook for 10-15 minutes or until seafood is cooked through.
- Remove bay leaves and serve over hot cooked rice.
