  • Start by selecting a fresh or thawed turkey that is the appropriate size for your gathering. Plan on 1 to 1.5 pounds of turkey per person.
  • Brine your turkey for added flavor and moisture. You can use a store-bought brine or make your own using a mixture of water, salt, sugar, and herbs. Brine for at least 12 hours before cooking.
