Ingredients:

  • 4 large russet potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Optional toppings: grated cheddar cheese, chopped green onions, crumbled bacon

Instructions:

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the onions and garlic, and cook until the onions are translucent and the garlic is fragrant, about 5 minutes.
